Ingredients
2 cups flour
1 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
1/4 tsp nutmeg (I had none, so this was omitted. It still tasted great)
1 cup sugar
6 tbsp butter
2 eggs
1/4 cup water
1/2 can of pumpkin
1 cup mini chocolate chips
1 tbsp chopped pecans (also omitted)
1 tsp sugar
1. Mix ingredients
Preheat oven to 350. Spray loaf pan with cooking spray.
In medium bowl, mix flour, baking soda, salt, cinnamon, and nutmeg.
In large bowl, beat 1 cup sugar and butter with electric mixer for 1 to 2 minutes or until creamy. Add eggs one at a time and mix again.
Add water and pumpkin and beat on low speed for 1 minute.
Set aside a tbsp of chocolate chips. Add remaining chocolate chips to the mixture and beat.
2. Bake
Pour batter into pan and spread evenly. Sprinkle tbsp of chocolate chips and tbsp of sugar over the mixture.
Bake for 1 hour. To ensure it is fully baked, insert toothpick until it comes out clean (keep in mind there might be chocolate on it).
Let it cool for 10 minutes before removing from pan. Place on cooling rack for another 20 minutes before serving.
This yields about 8 slices, and it is so tasty! Super easy to make, and one everyone can enjoy 😋
