Easy Shredded Chicken


This is where I remind you that I am in no way an "experienced chef" or a "professional". Because I just found out the easiest way to shred chicken, and I'm kind of embarrassed I didn't discover this before. You can shred chicken like this for pretty much all of my chicken recipes - baked pennechicken pot pie casserole, or chicken and noodles, It even works for the slow cooker recipes, if you make it sans slow cooker: cheesy chicken and broccoli and chicken spaghetti 
*Note - this really only works if you have a Kitchenaid or some kind of mixer with a paddle attachment.


1. Cook Chicken

So I just dump the raw chicken in the pan and occasionally turn it over - I never have to deal with cutting raw chicken or touching it and risking salmonella! It's perfect. Season to your liking - I usually sprinkle on some salt, pepper, and garlic powder.



2. Stir in Kitchenaid

Add a tbsp of butter and more seasoning in your Kitchenaid mixing bowl (when I'm lazy, I use a tbsp of vegetable oil instead). When the chicken is completely cooked, pour the pieces into your Kitchenaid mixing bowl and use the paddle to mix it around for several minutes. Somehow - even though the paddle has no sharp edges (*mind blown*) - it shreds the chicken perfectly.


3. Mix in with Main Dish

Stir the chicken in your main dish. In this case, I just combined it with some yellow rice (those cheap yellow rice packets like Vigo or Mahatma) for a super easy meal! Hubby likes to eat this with black beans :)
