Chicken Spaghetti



This recipe is so easy! Hubby and I like to use it on days we both work because you just throw ingredients into the crock pot, turn it on, and it's ready when you get home! Very little prep. Perfect for lazy chefs like me.


I got this recipe from my sister-in-law, so I can't take full credit for it. But we make this at least once a month because it's easy and so tasty!


Ingredients

3 chicken breasts
1 can cream of celery soup
1/4 cup onion
1 8 oz package cream cheese
1/4 cup butter
1 pack dry spaghetti sauce mix
1 box of spaghetti noodles
Given the cream cheese and the cream of celery soup, you can tell this recipe might be a little heavy for some. Here are some tips to make it a bit healthier:
  • Add frozen peas, if you have some on hand. A great way to get extra veggies.
  • Use "Healthy Requests" cream of celery soup instead of the normal stuff. Less fat!
  • Try using Hidden Veggie or whole wheat spaghetti noodles instead of the normal kind. If I have toppings on my pasta, I really can't taste the difference.

1. Combine ingredients

Combine everything except spaghetti into the slow cooker. There's really no need to stir it, either! Just dump it in and turn it on Low. Cook for 4-6 hours.

2. Cook spaghetti

When the slow cooker is done, cook spaghetti on the stove. Top spaghetti with creamy chicken and serve.

If you forget an ingredient in your haste to get ready in the morning, don't worry! As long as it's not the chicken, you can always add it later and then stir it all up. Hubby has forgotten the dry spaghetti sauce mix until right before we eat it, and I've forgotten the cream cheese, too! It still turns out great.

I usually buy chicken in bulk and freeze it. Then I use about 4 or 5 recipes per week that include chicken. Meat is usually the most expensive ingredient, so it saves a lot of money to buy it in bulk and then worry about the other ingredients each week when you meal plan.
