Here's my favorite... Oreo Truffles. Just three ingredients, and so easy to remember!
Ingredients
1 package Oreos (your choice of flavor)
1 package cream cheese
1 package chocolate chips
1. Crush Oreos
There are several ways you can do this. You can use a food chopper. You can put the Oreos in a gallon-sized Ziploc bag and use a rolling pin over it. You can use a large object, like a juice jug, to crush the Oreos in the bag. Or you can pour the Oreos into a bowl and use a potato masher (which is what I did).
Set aside 1/2 cup of crushed Oreos.
2. Mix cream cheese
Melt the cream cheese in the microwave (it helps to cut it up into smaller sections first).
Mix the cream cheese with the crushed Oreos until they're well blended.
Place bowl in freezer for 10 minutes.
3. Melt chocolate chips
There are multiple ways to do this as well. You can microwave them - but keep in mind you will have to take it out several times to mix it up, and then heat again. I used a double broiler.
4. Roll Oreos into small balls
Remove Oreo mixture from freezer and roll it into small balls. Place them on wax paper (or, in this instance, if wax paper is unavailable, aluminum foil is fine, too). Return to freezer for another 10 minutes (you want it to be as solid as possible before you dip it in chocolate so it doesn't come apart when it's dipped).
5. Dip in chocolate
Using tongs, dip each ball into the chocolate. Turn the ball over so it is completely covered. Return to wax paper. After each ball is dipped, sprinkle 1/2 cup of remaining Oreos over the dessert. Return to the freezer for another 10 minutes.
6. Devour shamelessly
You will be ashamed of how many of these you can eat. Cream cheese + chocolate = life's greatest, simplest, guilty pleasure.
If you find yourself with leftover dipping chocolate (oh, darn!), I reheated mine and dipped some pretzel sticks into it for a naughty snack later on. You can also dip strawberries or nuts.
